It’s almost grilling season! I want weekend grilling to be a regular thing in my home this year, so I am trying some recipes. There are some great burger recipes on the website, so it was time for me to add a vegetarian option. Marinated Portobello Mushroom burgers are the easiest and most delicious vegetarian burger recipe. Guess what? These marinated and grilled portobello mushrooms make a wonderful topping to any regular burger!
TIPS FOR BUYING PORTOBELLO MUSHROOMS
Please pay attention to how they are priced when you buy portobello mushrooms. They are usually sold in one of two ways. You can either buy them loosely and have the pound price or purchase them in sets of two or three to get a fixed price. You might notice a significant price difference even though they are identical products.
Today’s loose mushrooms were $5.99 per pound at my store. Although the set price for two packs of mushrooms was $3.99, the approximate weight of each package was 8oz. or 1/2 pound. If I had purchased the package of mushrooms, I would have paid $2 per pound more. I grabbed two loose portobello caps and was on my way. 🙂
CAN I GRILL THESE MARINATED POMBELLO MUSHROOM BURGERS?
The recipe was also tried in a skillet. It worked well, but you won’t get the grill marks. Cook the mushrooms in a skillet on medium heat until they are dry and the liquid has evaporated.
These marinated portobello mushroom burgers can be cooked on an outdoor grill. However, you can also use the grill pan in the step-by-step photos. Cast iron grill pans are designed to fit over gas stoves. They have ridges on one end and a flat grid on the other.
MARINATED POMBELLO MUSHROOM BURGERS
Marinated Portobello Mushroom burgers are an easy and quick vegetarian option for summer grilling, thanks to their rich, savory flavor.

INGREDIENTS
- 2 Tbsp olive oil ($0.08)
- 2 Tbsp soy sauce ($0.12)
- 1 Tbsp apple cider vinegar ($0.03)
- 1 teaspoon brown sugar ($0.02)
- 1/4 tsp oregano ($0.02)
- 1/4 teaspoon garlic powder ($0.02)
- 1/4 teaspoon onion powder ($0.02)
- 1 tsp smoked paprika ($0.10)
- Freshly cracked pepper ($0.03)
- 2 portobello mushroom caps (about 1/2 lb. total) ($2.94)
- 2 buns ($0.83)
OPTIONAL TOPPINGS
- 1 cup spring mix (0.32)
- 1 tomato ($0.70)
- 1/4 Red onion, cut into rings ($0.07)
- 4 Tbsp mayonnaise ($0.40)
INSTRUCTIONS
- Mix the olive oil and soy sauce with brown sugar, apple cider vinegar, tomato juice, onion powder, smoked paprika, and oregano in a small bowl (about 10 turns of a peppermill).
- Take the stems out of the portobello mushroom stems. * Place the mushrooms in an oven-proof dish with the gills facing up. Place some marinade in the gills. Then flip the mushrooms over and then pour the rest of the marinade over them. Allow the mushrooms to marinate for at least 30 minutes, turning them occasionally.
- Grill or grill pan on medium-high heat. Once the grill is hot, add the marinated portobello mushroom mixture and cook for 7 minutes or until they are softened, and most of the liquid has evaporated.
- Your marinated portobello mushrooms burgers can be made on a bun, with any toppings you prefer. The classic mayonnaise, sliced tomato and onion rings are my favorite toppings.
NOTES
*The mushroom stems can be saved and used later to make an omelet (chopped) and in your freezer to make vegetable stock.
