The family get-together has the Spinach cob loaf. They are always the first to be served, and guests will literally “scrape the bottom of the barrel” to grab the last dips. They are especially well-suited for Christmas potlucks.
You can also use them to make a wonderful entrée for a family meal of 6-8 people. The dip is very filling, so you’ll need a light meal.
What is Spinach Cob Loaf, exactly?
Spinach Cob Loaf can be served as a dip in a bread bowl. This classic Australian party dish has been around for over 100 years.
The traditional and most popular filling for spinach dip is bacon. We think this would be great next to our Bacon Camembert. Both would be delicious!
How Did We Learn This Recipe
Mum’s favourite recipes are always a favourite. They bring back memories of good times, parties and barbeques. We went to her house to find out how she makes it so delicious every time.
What do you need?
These six simple ingredients make a great dish that will impress.
- Cob Loaf – We used a plain, white loaf of cob bread from the supermarket. If you like, you can use wholemeal, sourdough or homemade.
- Spinach – Frozen spinach works a treat here. Half a bag (250g) was used. After thawing it in the microwave for a few minutes, we broke it up with a knife. Fresh spinach can also be used. Chop it and steam it or boil it first. Once it has cooled, you can use it as normal in the recipe.
- Sour cream – This adds creaminess to the dish and works well with the onion and spinach. If you prefer, cream cheese or ricotta can be substituted.
- Mayonnaise – We love Kewpie Mayonnaise as it elevates the cob loaf dip. You can use regular whole egg mayonnaise or add more sour cream if you prefer.
- Spring Vegetable Sup Powder – This adds a huge flavor to the mixture. You don’t need much salt. You can also substitute other flavors like French onion soup, 2 tbsp vegetable stock or chicken stock. You can substitute 1 tbsp chopped garlic for a more salty flavor.
- Red Onion – This adds a wonderful crunch to the dish. You can substitute spring onion and water chestnuts.
How to make cob bread at home?
- Cut the top of the cob off and take out the interiors. You can break it into pieces.
- Take out all water from the spinach.
- Mix the spring vegetable soup powder, mayonnaise and mayonnaise together to make the dip.
- When you are ready to serve, add the cob into the oven and bake for 5 minutes.
Tips
- Serve – To get the best results, make sure to put the filling in the bread right before you serve it. To save time, you can prepare the spinach filling ahead of time.
- Storage – If you have to transport the dip you can wrap the pieces in aluminium foil. This will keep it fresh until your arrival.
- Leftovers Any leftovers (doubt they will be) It won’t last long as the dip absorbs into the bread. We recommend throwing it out.
