Lemon Slice recipe
A simple no-bake Lemon Slice made with crushed biscuits, sweetened condensed milk and coconut. It’s quick, easy and downright delicious!
Winter is a time when lemons are abundant, so make this slice. Vitamin C is a vital vitamin for fighting off winter bugs. Lemons are well-known for their high levels of vitamin C. This slice is a satisfying combination of coconut and oats, making it a great mid-morning snack.
Serves: 12 squares
INGREDIENTS
Lemon coconut base
- 300 grams (roughly 3 cups) Digestive biscuits*, broken into pieces using your hands
- 100 grams (1 cup) of desiccated coconut
- Zest of one lemon
- 60 grams (1/4 cup) butter
- 240 ml (1 cup) sweetened condensed milk
- 2–3 tablespoons fresh lemon juice (roughly 1 lemon)
Lemon icing
- 125 grams (1 cup) icing or powdered sugar, sifted
- 1 tablespoon fresh lemon juice
- 1 tablespoon milk
- Lemon zest, to decorate
Prep Time: 15 minutes
Base
- 1 cup desiccated coconut
- 1 cup rolled oatmeal
- Zest 1 lemon
- 1/2 cup dried dates, boiled in boiling water for 30 mins (reserve the water).
- Coconut oil, 3 tablespoons
- One lemon juice
- A pinch of Himalayan salt
- 3 tablespoons water taken from dates
Icing
- 1 cup desiccated coconut
- Zest 2 lemons
- A pinch of Himalayan salt
- 1/4 cup maple syrup
- Two lemons – Juice
- 3/4 cup coconut oil, melted
INSTRUCTIONS
- Line an 8-inch square pan with parchment or baking paper. Mix the broken biscuits in a food processor until you get fine crumbs. Pour biscuit crumbs into a large mixing bowl.
- Stir in coconut and lemon zest. Microwave butter until smooth and melted.
- Mix butter, sweetened condensed dairy milk, and lemon juice. Stir well. Once the biscuit crumbs have been coated completely, transfer them to a baking dish. Use a spoon to press down on the biscuit crumbs.
- Before making the lemon icing, place the slice in the refrigerator for at least one hour.
- Mix sugar, lemon juice, and milk to make the icing. Stir until smooth.
- Spread the icing on top of the cookie base. Place back in the refrigerator for at least an hour. Serve by sprinkling fresh lemon zest on top and cutting into squares. Keep the slices in the refrigerator.
NOTES
Any sweet, plain biscuits from the store will work fine.
