Special fried rice recipe

This special fried rice is a twist on the usual restaurant-style fried rice and will be a big hit! Add any cooked meat, but shrimp, bacon, or Spam are great.

Ingredients

  • Two teaspoons of canola oil, or more as needed
  • Two eggs
  • 1/2 teaspoon water
  • Two teaspoons of sesame oil divided
  • 1/2 onion, diced
  • One clove of garlic, minced
  • 1/4 cup of carrots and peas are frozen, defrosted, and wiped dry with a paper towel
  • 2 cups cold cooked jasmine rice
  • One tablespoon Sriracha sauce, or to taste (Optional)
  • Two teaspoons of light soy sauce
  • One teaspoon of fish sauce
  • 1/2 teaspoon white sugar
  • 1/2 teaspoon salt, or to taste
  • half teaspoon white pepper or to taste
  • 1/2 teaspoon monosodium glutamate (MSG) (Optional)
  • 1/4 cup chopped green onion, or to taste, divided
  • 1/4 cup chopped fresh cilantro, or to taste (Optional)
  • One cucumber (Optional)

Directions

  1. Heat 2 teaspoons of canola oil on high heat in a large skillet or wok until it smokes.
  2. In a large bowl, beat eggs and water until smooth. Pour the beaten egg mixture into the skillet. Let it cook briefly until it begins to firm up, then lightly scramble with a wooden spatula for 2 to 3 minutes or until the eggs become shiny and cooked. Transfer cooked eggs onto a plate.
  3. Pour one teaspoon of sesame oil into the pan. Heat the canola oil until it is smoking. Add enough to cover the surface of the pan. Add onion and garlic to oil and sauté until fragrant (about 1 to 2 min). Add peas, carrots, and heat for another 1 to 2 min. Return the cooked eggs to the pan.
  4. Add the rice in small batches, breaking it into grains and mixing it with the vegetables. Cook and stir the rice until it turns light brown and is hot.
  5. Stir in the rice mixture with the Sriracha, soy, fish, sugar, white pepper, and monosodium glutamate. Stir and cook until the grains are no longer stuck together, about 2 to 3 more minutes. Remove the pan from the heat. Sprinkle green onions and cilantro over the rice. Toss together.
  6. Peel the skin off of the cucumber using a vegetable shredder. This will create an irregular pattern on the outside. Slice the cucumbers diagonally, and arrange them in a circular way around a platter. Rice should be placed in the center of the plate. Top with green onions and white pepper.

The best rice is day-old. Add only a little or too quickly to the pan. This will cause the pan to cool, which results in a soggy meal.

After cooking the onion and garlic, add cooked meat and warm it through before adding peas and kale.
