- 150g zucchini, grated
- Two eggs lightly beaten
- 1/3 cup milk
- 1 cup self-raising flour
- Half a teaspoon of ground cumin
- Salt and cracked black pepper
- Chop tomato to serve

- Step 1
- Mix the zucchini, corn, milk, and eggs. Stir in the flour, cumin, salt, and pepper gradually.

- Heat some oil in a nonstick frying pan on medium heat. Place heaped tablespoonfuls of mixture into the pan using a spoon. Cook in batches. Turn them with a spatula once until they are golden brown and cooked. Drain on a paper towel. Cover and keep warm while you continue to cook the remaining patties.
