GREEN TOMATO PICKLE

I searched for green tomatoes at my house for a very long time. Green tomatoes were the basis of many recipe ideas I had in my head. I couldn’t find them, so those recipes were on hold.

When I visited my mother a few days ago, she gave me a few green tomatoes she bought in her vegetable shop. I was delighted to see them and made pickles immediately.

Ingredients for Green Tomato Pickle

  • Green Tomatoes – 5-6 chopped finely (approximately 3 cups).
  • Salt – up to 2 tablespoons or according to taste
FOR ROASTING AND GRINDING
  • Mustard Seeds 2 tsp
  • Dry Red Chilli 6 to 8
  • Fenugreek seeds – 1/2 tsp
SEASONING OIL FOR SEASONING:
  • Gingelly Oil – 1/4 cup
  • Asafoetida / Hing / Kaya Podi – 1/4 tsp
  • Curry leaves in a small amount

Ingredients

  • Green Tomatoes – 5 to 6 Around 3 cups (chopped very finely).
  • # 1 to 2 tablespoons of Salt
  • ▢ For roasting & grinding:
  • ▢ Mustard Seeds 2 tsp
  • ▢ Dry Red Chilli 6 to 8 oz
  • ▢ Fenugreek Seeds – 1/2 tsp
  • ▢ Seasoning Oil:
  • ▢ 1/4 cup Gingelly Oil
  • ▢ 1/4 tsp Asafoetida / Hing / Kaya Podi
  • ▢ Curry leaves in a small amount

Instructions

    • Toast all ingredients for roasting in a pan until golden. It can be powdered in a blender.
    • Heat oil in a pan. Add asafoetida, curry leaves and stir well. Let it sizzle. Set aside to cool.
    • Add the Salt, powder and chopped green tomatoes to a bowl. Mix well.
    • Pour this mixture over the tomatoes, and stir well.
    • Store in a clean, airtight jar for at least two days.
