Ingredients
- 1-kilogram gravy Beef (no need for cutting; chuck steak also works well; see note 1)
- 2 tbsp Olive oil
- 2 Tbsp piled high Massaman Curry Paste
- 270 ml tin coconut milk
- One chicken stock Or 1 cup of water and one chicken stock cube)
- 8 Small potatoes (any variety), cut into 2cm pieces (no need for peeling).
- Two medium-sized onions sliced thickly into wedges
- Coriander and red chili slices crushed peanuts To serve (optional).

- Heat oil in a large pan over medium heat. Add the beef and cook for 3-4 minutes on each side. This will lock in the flavor.
- Combine the Massaman Curry Paste with Coconut Milk.
- Layer the beef, potatoes, and onions in this order.
- Pour the sauce over everything. Do not worry if the potatoes or onions aren’t completely submerged. They will melt in the sauce as they cook.
- Cook on high for four hours or low for eight hours. Continue cooking the beef on high at 30-minute intervals if the meat is still firm after the cooking time. Forks should easily separate the beef. To serve, use tongs to pull the meat apart into bite-sized pieces.
- Serve with coriander and sliced red chili. If using, top with crushed nuts.
