Instructions step by step
- Preheat the oven to fan forced 180c before you begin the recipe. Set aside a slice pan lined with baking paper.
- Add the butter softened and the white sugar to a bowl of an electric mixer. Beat until fluffy and light. Mix the desiccated Coconut, Vanilla Extract, and Self-Raising Flour until well combined.
- Press the mixture into the prepared slice pan. Bake for 15 minutes or until the top is just beginning to turn golden. Over the cake base, arrange the cored, peeled, and sliced apple slices. Pour the sour cream and egg mixture over the apple slices. Sprinkle the cinnamon over the apple slices and bake another 15 minutes or until the acidic cream layer is set.

- 1 cup desiccated coconut

- One egg
- 300ml sour cream

- Line a slice pan with baking paper. Preheat the oven to 180c.
- Add the butter to the bowl and the sugar and mix until fluffy. Mix the flour with the coconut extract and vanilla until combined.
- The mixture should be pressed firmly into the tin. Bake for 15 minutes or until the mix is slightly golden.
- Place the apple slices in one layer on the base. Peel, core, and slice them.
- Mix the sour cream and egg in a small dish. Pour the mixture over the apple layer. Sprinkle with cinnamon. Return to the oven and bake for another 15 minutes or until the sour cream layer is set.
- Let the slices cool in the tin.
