Sticky date pudding recipe

Sticky Date Puddings consist of moist, fluffy puddings made from dates and smothered with a caramel sauce.

Ingredients

  • Half Cup Butter (110g).
  • 3/4 cup Brown Sugar (130g).
  • Two Large Eggs
  • 1 and 1/3 cups Wholemeal Flour
  • Baking powder 1 1/2 tsp
  • 1 Cup Dried Pitted Dates (250g)
  • 1 and 1/4 Cups of Water
  • 1 tsp baking soda

Butterscotch Sauce;

  • 1 Cup Brown Sugar (190g).
  • 3 Tbsp. Butter (40g).
  • Half Cup Cream

Instructions

  • Bring the dates and the water to a boil in a large pan and let it boil for about 10 minutes.
  • While the brown sugar and butter are boiling, combine them until they become light and fluffy.
  • Add the eggs one by one and mix between additions.
  • Add the baking soda to the dates and stir through.
  • Mix the liquid date mixture with the butter mixture.
  • Mix in the baking powder and wholemeal Flour. Preheat the oven to 180 degrees C. Grease 6-8 ramekins, and then pour the mixture into the tins.
  • Bake for 20-25 minutes or until the skewer comes out clean.
  • Let the puddings/puddings cool down before turning them out.

Butterscotch Sauce;

  • Put the cream, butter, and brown sugar in a pan and bring it to a boil slowly while stirring.
  • Remove the pan from heat after 5 minutes.
  • Serve the puddings hot with generous amounts of butterscotch syrup!
  • Place the puddings in the microwave and heat for one minute 30 seconds.
