Lemon slice recipe

Slices are popular because they’re quick, simple, and easy to make. This no-bake Lemon Slice doesn’t disappoint! This is a recipe that I have made for many years. It reminds me of my baking days.

The base is made of crushed biscuits and condensed milk, along with a few kitchen staples that you probably already have. Lemon icing contains fresh lemon juice, lemon zest, and other ingredients to give it a tangy taste.

This is the BEST lemon slice.

  • No bake is all you have to do to make the lemon slices and place them in the refrigerator for four hours to set. It’s so easy!
  • The base of the best flavor is filled with lemon zest and fresh lemon juice.

  • The fridge will keep it for up to five days (if you’re lucky! ).
  • Freezer-friendly: Place the slices in an airtight container and place them in the freezer. Take a piece whenever you want a sweet treat. Let it defrost at room temperature for 20-30 minutes.

Lemon Coconut Slice

This lemon and coconut slice will be a great sweet treat for your afternoon tea or coffee. (I also recommend these soft cheese scones.) This is a favorite with both adults and children. It’s easy to make ahead and travels well, so you can bring it with you whenever you need to “bring a dish.”

No Bake Lemon Slice

With all the No-bake desserts I’ve shared, it’s clear that I love no-bake desserts. These are great on hot days when you don’t want to turn on the oven. They’re also great for getting kids into the kitchen.

Lemon Slice Ingredients

Biscuit Base

Super Wine Biscuits, 9oz/250g – Or any plain tea biscuit/ cookie

80g / 1 cup Desiccated Coconut

115g butter – Cold or at room temperature

200g/1/2 Can of Condensed Sweetened Milk. Check out the recipes to use the other half of the sweetened milk

1 Lemon Zest and Juice

Icing

250g / 2 cups / Icing sugar Sugar Powder These are all the same ingredients, just called differently in different parts of the world

2 Tbsp butter

One lemon – Juice and Zest

1 Tbsp of Boiling Water

1/4 cup / 20g Desiccated Coconut

How to Make Lemon Slice

Lemon Base

Crush the biscuits using a food processor, a heavy object such as a rolling pan or frypan, or a bag with a heavy object.

Transfer the mixture to a large bowl.

Use a wooden teaspoon to mix the ingredients well.

Melt butter in the microwave or a small pan on low heat. Pour the butter into a mixing bowl with 1/2 a can of sweetened milk. You can freeze the other half in an airtight container to use later. Here are some of my favorite recipes for using it.

Use any citrus fruit you like for this recipe.

Yes! Any other citrus fruit will do. It is also good to combine lemon with lime or orange.

How much lemon slice can I make?

Double this recipe if you want to make more. If you want to double the recipe and have it be the same thickness, use a rectangular baking pan.

Lemon Base

  • 9oz / 250g Superwine Biscuits
  • 1 cup / 80g Desiccated Coconut
  • 1 Lemon Juice and Zest
  • Butter Sticks / 8 Tbsp/ 115g
  • Half tin (200g) Sweetened Condensed milk

Lemon Icing

  • 2 Cups (250g) Powdered Sugar or Icing Sugar
  • 2 Tbsp/30g Butter
  • 1 Lemon Juice and Zest
  • 1 Tbsp of Boiling water
  • 1/4 cup / 20g Desiccated Coconut

Instructions

Lemon Base

  1. Crush the biscuits using a food processor, a heavy bag, or a rolling pan or frypan. Transfer the biscuits to a large bowl.
  2. Use a wooden teaspoon to mix the ingredients well.
  3. Melt butter in the microwave or a small pan on low heat. Pour the butter into a mixing bowl with 1/2 a can of sweetened milk. You can freeze the other half in an airtight container to use later. Here is a list of my favorite recipes for using it.
  4. Zest the lemon using a microplane or a fine grater. Slice it in half, and squeeze all the juice out. Add both of these to the mixing dish.
  5. Mix all the ingredients well using a wooden spatula.
  6. Line a square baking pan of 8″ or 20cm with non-stick paper. Pour the base mixture into the pan and use the back of the spoon to press it flat.
  7. While we prepare the lemon icing, place the base in the fridge to begin to set.

Lemon Icing

  1. Add all ingredients for the lemon icing to a small bowl, except the boiling water.
  2. Mix the ingredients with a wooden spoon. Be sure that your butter is at room temperature to ensure it mixes well with other ingredients. At this point, the lemon icing is very thick.
  3. Add 1 tbsp boiling water, and mix. If you have lumps, use a whisk or a mixer to remove them. If the icing remains very thick, you may need to add another Tbsp boiling water.
  4. Spread the lemon icing around the edge. Sprinkle over about 1/4 cup more desiccated coconut.
  5. Set the lemon slices in the refrigerator for at least four hours or overnight.

Slice and Serve

  1. Use the non-stick paper to lift the lemon slice out of the pan.
  2. Cut the lemon slices into 9-12 pieces, depending on how large you want them. They are now ready to eat.
