Apple sour cream slice

This Apple & Sour Cream Slice ranks right up in the old-fashioned slice category with Peppermint Slice, Jelly Slice, and Coconut Ice. These classic slices have been around for a long time.

Homemade Old Fashioned Apple & Sour Cream Slicing

Some variations of this cake use a packet cake mix as the base, but mine is entirely homemade (and couldn’t be simpler!). The base for the homemade teacake is made in just one bowl and takes only a few minutes to prepare. Forget about buying a packet of the mix! This version is much cheaper and easier to make.

The Ingredients for Apple & Sour Cream Slicing

For the Base:

  • Butter melted
  • self-raising flour
  • Caster sugar
  • Coconut desiccated
  • vanilla extract

How to make apple slicing with sour cream

STEP 1: PREPARE THE BASE FOR THE TEA CAKE

  • Pour the butter, sugar, vanilla, and coconut extract into a bowl of medium size. Over the self-raising flour, sift. Mix until creamy and smooth. Bake until golden.

STEP 2: LAYER THE APPLE SLICES

On top of the baked base, place thinly sliced apple slices.

STEP 3: MIX SOUR CREAM WITH EGGS

Mix the sour cream and eggs with a fork or whisk. Pour the mixture over the apple slices.

STEP 4: Sprinkle with Cinnamon

Sprinkle some cinnamon sugar or ground cinnamon over the slice.

STEP 5: BAKE THE CUPCAKES UNTIL THEY SET

Bake the sour cream in the oven until it has a firm consistency, about 20 minutes.

Ingredients

  • ▢ 125g melted butter
  • ▢ 200 g (1 1/3 cups) self-raising flour
  • ▢ Sugar caster 150 g ( 3/4 cup).
  • ▢ 65 g ( 3/4 cups) desiccated Coconut
  • ▢ 2 tsp vanilla extract
  • ▢ Two eggs
  • ▢ 250 g sour cream
  • ▢ Peel and thinly slice two apples
  • ▢ See notes for 2 tsp of ground cinnamon.

Instructions

Conventional Method

  • Preheat oven to 180 degrees Celsius. (160 if you are using a fan-forced range). Baking paper and grease should line a 20cm cake tin.
  • Pour the butter, sugar, vanilla, and coconut extract into a bowl of medium size. Over the self-raising flour, sift. Mix until creamy and smooth.
  • Bake for 15-20 minutes until golden.
  • Remove the baked slice and place the thinly-sliced apple on top.
  • Beat the sour cream and eggs in a bowl until they are well combined. Pour the sour cream mixture on top of the apples.
  • Sprinkle cinnamon powder (or cinnamon sugar) over the top.
  • Put the dish back in the oven and bake for 20 minutes or until the sour cream has hardened.
  • Let the tin cool before placing it in the refrigerator to cool completely.
  • Slices can be cut when the pieces are entirely frozen.

Thermomix Method

  • Preheat oven to 180 degrees Celsius. (160 if you are using a fan-forced range). Baking paper and grease should line a 20cm cake tin.
  • Melt the butter in the TM bowl at Speed 3, 60 degrees Celsius for 2 minutes.
  • Add the coconut, caster sugar, self-raising flour, and vanilla essence, and mix at Speed 3 for 30 seconds (scraping the sides of your bowl as needed).
  • Bake for 15-20 minutes until golden.
  • Remove the baked slice and place the thinly-sliced apple on top.
  • Mix the sour cream and eggs in the TM bowl for 30 seconds at Speed 4. Pour the sour cream mixture on top of the apples.
  • Sprinkle cinnamon (or cinnamon sugar) over the top.
  • Put the dish back in the oven and bake for 20 minutes or until the sour cream has hardened.
  • Let the food cool down completely before placing it in the refrigerator. When thoroughly chilled, cut into slices.
