Beetroot and feta salad

A side salad with contrasting flavors is a delicious option. Add herbs, spices, and honey mustard dressing.

Ingredients

  • 200g bag of baby spinach leaves
  • 500g of cooked beetroot
  • 2 x 200g packs feta cheese, crumbled
  • Leaves of mint, roughly chopped
  • Spring onions, finely cut into bunches.
  • Two long chilies, deseeded, halved, and finely chopped

Dressing

  • 5 tbsp Rapeseed Oil
  • 5 tbsp honey
  • 5 tbsp of lemon juice
  • 1 tbsp Dijon mustard

Method

  • STEP 1
    • Spread the spinach leaves on a large plate. On top of the spinach, arrange the wedges of beetroot. Sprinkle the feta over. Add the mint, spring onion, and chilies.
  • STEP 2
    • Pour the dressing, place the mustard, honey, and lemon juice in a glass container with a lid. Shake well and season. Pour the sauce over your salad when ready to serve and gently combine.
