A side salad with contrasting flavors is a delicious option. Add herbs, spices, and honey mustard dressing.
Ingredients
- 200g bag of baby spinach leaves
- 500g of cooked beetroot
- 2 x 200g packs feta cheese, crumbled
- Leaves of mint, roughly chopped
- Spring onions, finely cut into bunches.
- Two long chilies, deseeded, halved, and finely chopped
Dressing
- 5 tbsp Rapeseed Oil
- 5 tbsp honey
- 5 tbsp of lemon juice
- 1 tbsp Dijon mustard
Method
- STEP 1
- Spread the spinach leaves on a large plate. On top of the spinach, arrange the wedges of beetroot. Sprinkle the feta over. Add the mint, spring onion, and chilies.
- STEP 2
- Pour the dressing, place the mustard, honey, and lemon juice in a glass container with a lid. Shake well and season. Pour the sauce over your salad when ready to serve and gently combine.
