The sauce is the key to a great Chow Mein. It’s made with soy sauce and oyster sauce. Sugar, sesame, and cornstarch are used for thickening. Noodle heaven is slippery noodles with a savory sauce! This is one of my favorite noodles. It’s right up there with Pad Thai, Pad See Ew, and Singapore Noodles.
Chow Mein
Chow Mein is one of my favorite noodles, but I am worried that I have already said it in another recipe.
There is a lot of noodle competition out there. Pad Thai; Pad See Ew(Thai Stir-Fried Noodles); Singapore Noodles; Yakisoba.
Chow Mein, however, is a close second. It’s not only because it’s delicious and noodle-slurpingly good, but it also has the following features:
- There are tons of hidden vegetables- carrots, cabbage, and bean sprouts all disguised as “noodles” that blend right in with the noodles, so you don’t know how much you eat (it’s almost like feeding a baby);
- It’s faster to get that delivery to your home – only 15 minutes.
- Stir fries are versatile. You can change the vegetables and proteins as you wish.
- Charlie – Chow Mein Sauce is easy to make from scratch or with my all-purpose Stir Fry Sauce, which I keep on hand. Yes, I named it because I love him.
What type of noodles can you use for Chow mein?
- Chow Mein noodles are different from other stir-fried noodles because of the type of noodles they use. Chow Mein noodles have a thin, wrinkled appearance and are lightly floured.
- This is a close-up of the noodles. The supermarket version of Fantastic Noodles may be a little more yellow than you’d expect, but it is still delicious.
Where can I find Chow Mein Noodles in your area?
- Use Ramen Noodles or any other instant noodles. Just throw away the packet seasoning. Use thin egg noodles or spaghetti (check the ingredients, they should list egg).
What is in Chow Mein?
- Chow Mein is almost always served with cabbage, carrots, and bean sprouts, followed by your choice of proteins. Chicken is the most popular meat, but I don’t have any statistics to prove it.
- For stir-fries, I prefer to use chicken thighs because they are juicier. When I cook this dish with chicken breast, I use a Chinese restaurant method using bi-carb (baking soda).

- Here are the ingredients you’ll need to make this sauce. Chinese Cooking Wine is a key ingredient in making home cooking rival takeout. Your local Chinese restaurant uses Chinese Cooking Wine in almost everything. !
Chow Mein Recipe
- Here’s how you can make it. You’ll have your meal ready in less than 5 minutes once you begin cooking. You can have a delicious bowl of noodles no matter which protein, vegetables, or noodles you choose, as long as you follow the Sauce recipe and add the same amount of noodles plus other ingredients (vegetables, proteins, etc.) to ensure the flavor doesn’t get diluted.
Ingredients

- # Thinly sliced 200g/6 oz breast or thigh chicken fillets (Note 1: Tenderise Option)
- ▢ Four cups of finely shredded green cabbage (Note 3).
- ▢ 1 1/2 tablespoons peanut oil (or another cooking oil).
- ▢ Two cloves of garlic, finely minced
- ▢ Note 2: 200g/6 oz Chow Mein Noodles
- ▢ 1 carrot , julienned
- ▢ Bean sprouts, 1 1/2 cups
- ▢ Green onions, 3 – cut into 5cm/2″ pieces
- ▢ 1/4 cup (65ml) of water
CHOW MEIN SAUTE:

- ▢ 2 tbsp cornflour or cornstarch
- ▢ 1 1/2 tbsp Soy Sauce, All Purpose or Light (Note 4)
- ▢ 1 1/2 tbsp oyster sauce (sub Hoisin)
- ▢ 1 1/2 tbsp Chinese cooking wine OR Mirin (Note 5)
- ▢ Sugar: 2 tsp (reduce sugar to 1 tsp when using Mirin).
- ▢ Sesame oil, 1/2 tsp
- ▢ White pepper (sub-black)
Instructions
SAUCE:

- Mix cornflour with soy sauce and then add the remaining ingredients.
- Alternate: If you have Chinese All Purpose Spicy Stir Fry Sauce in stock, use 1/3 cup.

CHICKEN & NOODLES

- Marinate chicken: Pour 1 tbsp Sauce over the Chicken, mix to coat, and set aside for 10 minutes.
- Noodles – Prepare the noodles as per the instructions on the package (my packet says to soak the noodles in boiling water for one minute, then drain).

COOKING:

- Heat the oil in a wok or large frypan over high heat.
- Stir fry garlic for 10 seconds or until it turns golden. Do not let it burn.
- Stir fry the Chicken until it is cooked but still raw inside. This should take about a minute.
- Add the carrots, shallots, and white pieces (i.e., From the base of the stalk. Stir-fry for 1 1/2 minutes or until the cabbage has mostly wilted.
- Add the noodles and water. Stir-fry for 1 minute while tossing the noodles constantly.
- Add remaining shallots/scallions and bean sprouts. Toss for 30 seconds or until bean sprouts start to wilt.
- Serve immediately after removing from the heat.
