Chicken patties recipe

This recipe has been reworked to be nothing similar to the middle school lunches you remember. We revamped the classic patty and added a variety of toppings to make it one of the best sandwiches you’ve ever had. The cornflake-crusted Chicken makes for a crispy cake that goes well with Pickles and homemade honey mustard mayo. This new take on the cafeteria favorite is packed with flavor and crunch.

What is the main ingredient in chicken patties? You might find ground chicken, flour cornmeal, onion powder, and garlic powder in frozen chicken patties. This version incorporates most of these ingredients, along with some notable players. The exterior of some cakes is bread crumbs, which can be nostalgic. I added cornflakes to give it an extra crunch.

Fry or bake?

These patties are either baked or deep-fried. These patties can be baked at high temperatures to achieve the same crunchiness. Spray olive oil on both sides of the cakes before baking. Place them on a wire rack inside a baking tray. Use the convection mode if you have one to circulate heat around the patties.

Serving Ideas

Although we love the classic chicken sandwich, other ways exist to serve these patties. It’s almost like eating nuggets. Eating without a bun would be a good thing. Remember the homemade honey-mustard mayo, no matter what you decide!

Tip: You can make your mayo three days before and store it in an airtight container.

Storage and freezing.

Why not buy them frozen and par-cooked from the freezer aisle? I suggest frying the patties and allowing them time to cool. Then, freeze each one individually in a zip-top bag wrapped in foil. If you do not have the time to fry them, you can freeze them in plastic bags until you are ready to use them.

HONEY MAYO

    1. Step 1: combine mayonnaise with mustard, honey, and paprika in a large bowl—season with salt. Refrigerate until ready for use.
    2. Step 2 Make ahead: Mayo may be prepared three days in advance. Keep in a tightly sealed container and refrigerate.

CHICKEN PATTY AND ASSEMBLY

    1. Step 1Mix Chicken, shallots, flour, garlic, salt, and pepper in a large bowl. Make six patties (about three oz.). Patties.
    2. Step 2 In a shallow dish, spread the cornflakes evenly. On both sides, press patties into the cornflakes.
    3. Step 3 Pour oil into a Dutch oven or large skillet with straight sides and a deep-fry thermometer. Heat on medium-high heat until the thermometer reads 350o. Cook patties in batches and flip them once until they are golden brown. This should take 2 to 3 minutes on each side. Transfer the cakes onto a plate lined with paper towels and season them with salt.
    4. Spread honey mustard mayo onto the cut side of each bun. Place lettuce in the bottom bun. Top with pickles, tomato, or both, and a patty of Chicken. Close with top bun.
