Corn & zucchini fritters

This meal is great for kids and adults alike. These cakes can be served with meats such as beef or chicken for a main course.

  • 10 Ingredients
  • 310g tin corn kernels, drained
  • 150g zucchini, grated
  • Two eggs lightly beaten
  • 1/3 cup milk
  • 1 cup self-raising flour
  • Half a teaspoon of ground cumin
  • Salt and cracked black pepper
  • Chop tomato to serve
  • chopped avocado to serve
  • Coriander leaves are used to make a delicious dish.
  • Method Steps
  • Step 1
  • Mix the zucchini, corn, milk, and eggs. Stir in the flour, cumin, salt, and pepper gradually.
  • Step 2.
  • Heat some oil in a nonstick frying pan on medium heat. Place heaped tablespoonfuls of mixture into the pan using a spoon. Cook in batches. Turn them with a spatula once until they are golden brown and cooked. Drain on a paper towel. Cover and keep warm while you continue to cook the remaining patties.

  • Serve the cakes with avocado, tomato, coriander, and sweet chili sauce.
