Creamy chicken pasta bake

Now, onto the recipe!

Easy Creamy Pasta Bake. This pasta casserole is made with a simple, creamy sauce requiring only two ingredients. Add your bacon, ziti/penne, and bake it in the oven.

This creamy chicken pasta dish is perfect for nights when you are short on time but still need to feed your family.

This is an excellent way to use leftover rotisserie or BBQ chicken in Australia – I wonder why because the chicken hasn’t been barbecued. I’ve also used smoked ham, and you can taste that extra flavor of the smoke throughout the dish. Yum. Plus, who likes something other than creamy baked pasta?

Ingredients

  • About 200g of leftover chicken shredded in 2 cups
  • 250 g dried macaroni pasta (see notes)
  • A tiny pinch of salt!
  • Four rashers of smoked bacon, roughly chopped
  • Crushed two large cloves of garlic
  • Fresh rosemary, one teaspoon finely minced
  • Pure cream 300 ml
  • Butter, two tablespoons
  • Fresh parmesan cheese, grated to a 1/3 cup (50g).
  • 1/3 cup shredded mozzarella not fresh (40g)

Instructions

  • Heat oven to 180cff/ 355f
  • Add two teaspoons of butter to the pot and stir lightly to coat. Drain the pasta as per packet directions.
  • Garlic and rosemary can be added to the pan after 6-8 minutes of frying. Remove pan from heat and continue to cook for another minute.
  • Add the bacon mixture to the cooked pasta and stir to combine. Then add the cream & parmesan shaved to the pasta. Mix to coat. Finally, add chicken to the pasta.
  • Top with shredded cheese and bake for 20 minutes or until the peaks are slightly browned. Serve immediately.
