Ingredients
- All-butter puff pastry 375g
- flour for dusting
- 2 tbsp apple sauce, pickle, or chutney
- 400g sausagemeat or sausages, skins removed
- One egg, beaten
- 2 tsp sesame seeds or nigella seeds (optional)
Method
- STEP 1
- Roll the pastry to a 35x30cm rectangle on a lightly floured surface. Trim the edges and cut them in half to make two long strips. Spread a thin layer with the apple sauce or pickle, and leave a border around the edges.
- STEP 2
- Mix three tablespoons of cold water to the sausagemeat in a large bowl. Divide the mixture into two halves and shape each into a cylindrical form. Place each meat portion in the middle of one pastry strip. Leave a border on either side. Brush the pastry border with the beaten eggs and top the sausage mixture. Roll the meat in the pastry and fold the edge over. Use a fork then to press together the pastry edges. Slice the sausage rolls into 5cm pieces and place them on a baking tray lined with parchment paper. For 20 minutes, chill. The dish can be prepared a day in advance or frozen for up to a month. You must add 10 minutes to the cooking time to bake the plate from frozen.
- STEP 3
- Heat the oven to 200C/180C Fan/gas 6. Sprinkle the sesame or nigella seed (if you use them) on the rolls and brush with the remaining egg. Bake the pastry for 30 to 35 minutes until it is golden. Then, transfer the registrations onto a wire rack to cool down for 10 minutes.
