Egg and lettuce sandwich

Create an elegant afternoon tea by quickly whipping up these delicious high-tea sandwiches.

7 Ingredients

  • Hard-boiled eggs peeled and finely chopped
  • 1/4 cup whole egg Mayonnaise
  • Finely shred two baby cos leaves
  • Three large white slices of bread
  • Three large multigrain slices
  • Three large pieces of wholemeal bread
  • 40g softened butter

3 Method Steps

  • Step 1
  • Mix the egg with mayonnaise and place in a bowl. Add lettuce. Stir until well combined. Season.
  • Make mayonnaise in three quick and straightforward ways.
  • Step 2.
  • Spread butter on one side of each bread slice. Divide the egg mixture equally between white and multigrain bread slices. Multigrain slices should be placed egg-side down on top of the white pieces. Place wholemeal, butter-side up, on top of white parts.
  • Step 3
  • Trim the crusts. Each sandwich should be cut into three fingers. Serve.
