Silverside is an unmarbled, lean beef cut with a more coarse texture. The texture is similar to the top side but a little more challenging. It is best cooked at a lower temperature for optimum tenderness. Silverside is an excellent base for a healthy, economical meal. Just add some salad or vegetables to make a complete midweek meal.
Here’s an easy way to cook Silverside with just a few ingredients (without a slow cooker).
Silverside Recipe:
INGREDIENTS
- Silverside 2.2kg
- Two carrots peeled and coarsely chopped
- Celery stalks, 2 trimmed and roughly chopped
- One onion, finely chopped, halved
- Black peppercorns, one tablespoon
- Six cloves whole
METHOD
Step 1
Add the Silverside to a large pan. Add the celery, carrots, cloves, peppercorns, and onion. Cover the pot with cold water, and bring it to a boil on medium heat.
Reduce heat to medium. Cover and simmer for 2 hours, occasionally skimming the surface. Remove from heat. Drain the spices and vegetables.
Step 2.
Slice the Silverside corned across the grain. Serve with sauce of your choice or vegetables.
What does corned Silverside mean?
Silverside and corned meat are sometimes used interchangeably. Corned meat is a cut (brisket) that has been pickled or cured in a brine. Silverside is a beef cut, the hindquarter, just above the leg. It gets its name from the silvery appearance of the amount.
Can you cook Silverside in a slow cooker?
Silverside is a good choice for slow cooking because of its slightly tougher texture. Slow-cooking silverside tenderizes the meat and enhances the flavor.
How to serve Silverside
Silverside is a traditional dish with simple sides such as potatoes, cabbage, carrots, spinach, and peas polenta. Silverside goes well with condiments like applesauce or cranberry sauce.
