- Silverside 2.2kg
- Two carrots peeled and coarsely chopped
- Celery stalks, 2 trimmed and roughly chopped
- One onion, finely chopped, halved
- Black peppercorns, one tablespoon
- Six cloves whole

Add the Silverside to a large pan. Add the celery, carrots, cloves, peppercorns, and onion. Cover the pot with cold water and bring it to a boil on medium heat.
Reduce heat to medium. Cover and simmer for 2 hours, occasionally skimming the surface. Remove from heat. Drain the spices and vegetables.
