You will need the following ingredients to create a lamb mince hotpot recipe that is bursting with flavor:
- 2 tbsp balsamic vinegar (Sulphites)
- 3 x Carrot
- 2 tsp of cornflour
- 1 Garlic clove
- 500g Lamb mince
- Fresh mint leaves, one handful
- One brown onion
- Fresh peas 300g
- Three large white potatoes
- One beef stock cube
- 2 tbsp tomato puree
- 2 tsp dried Thyme
Instructions for QUICK Lamb Mince Recipe
This delicious lamb mince can be cooked in only 45 Minutes! Follow these simple instructions to get started:
- Boil a kettle and preheat the oven to 240C/fan 220C/gas mark 8. In a 250ml jug, dissolve the stock cube with boiling water. Slice the potatoes thinly, then place them in a medium-sized saucepan. Cover with boiling salted water. Par-boil the potatoes for only 7-8 minutes, until they are slightly softened but not completely cooked. Drain and steam them dry.
- Heat a large pan with 2 tsp of oil over a medium heat. Add the minced lamb and cook, stirring frequently, for 5-7 minutes, until it is browning and crisping at the edges. Season with black pepper and sea salt.
- Peel the onion and finely dice it. Peel the carrot and dice it into 2cm-sized pieces. Crush or finely grate the garlic. Mint leaves should be roughly chopped.
- Add onion, garlic, and carrot to the minced lamb, and cook for five minutes or until the veggies are soft. Then add tomato puree and cornflour and cook for 30 seconds more. Finally, add the stock, vinegar, and cornflour. Add a pinch of fresh mint. Stir for 5 minutes until the sauce thickens.
- Spread the lamb mixture in a dish that can be baked. Place the potatoes on top. Sprinkle the remaining dried Thyme and drizzle with 3 tbsp of oil. Season with salt and pepper. Bake potatoes for 20 minutes or until they are golden.
- Re-boil a kettle. Place the remaining mint leaves and peas into the pan from earlier. Cover the peas in boiling water, and then simmer for four minutes. Drain.
- Serve the hotpot alongside the minted beans.

How to cook a Lamb Mince Burger
You can now focus on other tasks that you need to complete. Follow these simple steps to get started:
- Preheat the oven to 200C/fan 180C/gas mark 6. Cut the white baby potatoes into wedges. Place the potatoes with a pinch of sea salt in a pan, add boiling water to cover, and cook for 10 minutes.
- Drain the potatoes. In a large bowl, combine the oil with harissa paste and sea salt. Place the potatoes on a baking sheet and bake for 15 to 20 minutes until golden.
- In a large bowl, combine the minced lamb with cumin, a pinch of salt, and black pepper. Then, form the mince into two burgers that are around 1cm in thickness.
- Peel the baby cucumbers and cut them into long, thin strips. Set aside the strips for the burgers. Prepare the salad. Dice the red onion, cherry tomatoes, and remaining cucumber. Mix in a large bowl with 3/4 of the apple vinegar and 1/2 tablespoon olive oil.
- Fry the burgers in a frying or grill pan on medium heat for about 4-5 minutes on each side until they are cooked. Let the burgers rest for a couple of minutes.
- Remove the stalks from the mint and thinly slice them. Mix coconut yogurt, mint, and remaining apple cider vinegar. Add sea salt and pepper.
- Put the burgers onto two plates and top them with the cucumber ribbons and mint yogurt. Salad and harissa wedges can be served alongside.
