Osso Bucco slow cooker

Two tricks are needed to make this recipe easy: brown the veal shanks in the slow cooker before adding them to the slow cooker, and reduce the sauce before serving it. You won’t need to clean another pan if you have a slow cooker with a safe insert on the stovetop. You’ll be hard-pressed not to recognize the labor-intensive classic from this osso buco. It’s best served with the Risotto Alla Milanese saffron-scented.
Ingredients
- 1/2 cup all-purpose flour
- Four 1-1/2 to 2-inch thick veal shanks (about 2 1/2 lb.
- Freshly ground black pepper and kosher salt.
- 1 cup white wine
- One 14-1/2-oz. can of diced tomatoes
- 3/4 cup lower-salt chicken broth
- One small red onion chopped (1-1/2 cups).
- One medium carrot, cut into rounds of a 1/4-inch thickness (1/2 cup).
- One stalk celery chopped (1/4 cup).
- 5 sprigs fresh Thyme
- 3 Tbs. Finely chopped fresh flat-leaf Parsley
- 1 Tbs. finely grated lemon zest
- 1 large clove of garlic, minced (1 teaspoon).

Preparation
- Place the flour in a large, shallow dish. Season the veal shanks with salt and pepper. Dredge the flour in a shallow dish. Heat a 12-inch skillet on medium heat. When the butter has melted, add the shanks. Cook for 10 minutes, turning once. Transfer the shanks into a slow cooker
- Add the wine to your skillet. The skillet’s bottom should be scraped. Add the tomatoes, their juices, chicken broth and onion. Cook on low heat for 6-8 hours. The meat should be tender and fall off the bone.
- To keep the shanks warm, transfer them to a plate and cover with foil. In a large saucepan, heat the sauce in the slow cooker. Reduce heat to medium and simmer for 10 to 15 minutes. Salt and pepper to your liking
- In a small bowl combine the garlic, parsley, lemon zest and garlic to make a gremolata. The sauce and the gremolata can be served with the veal shanks.
