Ingredients

CHICKEN RICE TAPER ROLLS

  • 2 cups of cooked, shredded chicken (see note)
  • 200 g of lettuce leaves, shredded
  • Cut one large carrot into thin strips.
  • Finely slice one small cucumber
  • Prepare 50 g of rice noodles according to the instructions on the packet.
  • Fresh mint leaves (or coriander leaves): 1/2 cup
  • Round rice paper sheets of 12, 20cm diameter

DIVING SAUCE

  • 1/4 cup sweet chili sauce
  • Juice of one lime

Instructions

CHICKEN RICE TAPER ROLLS

  1. Fill a large dish with warm water. Dip the rice paper sheet (one by one) into the water for 30 seconds. Place it flat on the work surface. Place the chicken, noodles, and vegetables in the bottom of each wrapper.
  2. Roll the mixture from the bottom and fold the sides over the filling. Continue with the remaining wrappers and mixtures. Set aside.

DIVING SAUCE

  1. Mix the sweet chili sauce with lime juice in a bowl.
  2. Serve the rice paper rolls with dipping sauce.
