ROCKY ROAD RECIPE

My Easy Rocky Road is easy to make in just minutes. Both adults and kids love this easy, no-bake recipe. This will become a favorite recipe in your kitchen. This sweet treat is perfect for enjoying after dinner. You can also make it into a cake or wrap it in cellophane bags for welcome gifts.

WHY DO WE LOVE THIS RECIPE?

This recipe is easy to make. This recipe requires very little culinary skill. This popular slice can be made by anyone who can melt chocolate. If you’re new to melting chocolate, I’ll show you how.

It is so simple that you can make it with your children. Although it may get messy, that’s part and parcel of the fun. It doesn’t require any cooking. Melt it and mix.

Preparing everything before melting the chocolate is important to avoid making it a difficult road. If the chocolate sets too quickly, mixing with the other ingredients can become difficult.

INGREDIENTS IN THIS RECIPE

Dark and milk chocolate – Use high-quality ingredients to get the best results. Choose chocolate that you like to eat.

Desiccated Coconut – Desiccated coconut is dried and finely ground coconut. It can be found in supermarkets. It is not the same as shredded coconut or flaked coconut.

Marshmallows – Use a mixture of large pink marshmallows and small white marshmallows. If you like, you could also use mini marshmallows.

Peanuts – The peanuts are roasted, but not salt. You can substitute a sweet biscuit/cookie if you prefer it without nuts, which can be broken up into smaller pieces.

Glace cherries – Sometimes called candied cherries, I use red.

STEP-BY-STEP INSTRUCTIONS

  1. Before you start melting the chocolate, make sure your ingredients are ready for the Easy Rocky Road. Put the coconut, quartered marshmallows and peanuts in a large bowl. Line a 7 inch by 5 inch slice pan with non-stick baking parchment.
  2. Chop the chocolate into small pieces. Place the bowl over a saucepan of barely simmering water.
  3. Use a spatula or metal spoon to stir the chocolate until it is almost melted. The residual heat from the oven will melt any remaining chocolate. Give it one last stir.
  4. Once the chocolate is melted, allow it to cool down for a few minutes before adding to the bowl. Stir well to combine all the ingredients. It may melt the marshmallows if it’s too hot.
  5. Mix the ingredients in a bowl. Use a spatula or spoon to flatten the mixture.
  6. Sprinkle the coconut, glace cherries, and reserved marshmallow pieces on top. Set it in the fridge for at least 2 hours, or until it is set. Then cut into 10 pieces.
