We love San Choy Bow. These lettuce cups are perfect for dinner or lunch. They’re packed with flavor and full of vegetables and protein, so they’re also super healthy.
These are great for letting the kids self-serve. They can easily spoon the mince into their lettuce cups, allowing them to feel independent and responsible. It also helps with their fine motor skills and coordination. San Choy Bow was designed to be eaten with your hands. So don’t worry about getting messy!
Ingredients (serves 4)
- One tablespoon of Peanut Oil
- Two tablespoons of Soy Sauce
- Two tablespoons of Oyster Sauce
- 1 tsp Sesame Oil
- 500g Minced Pork, Chicken or Plant-Based
- 1 tsp Crushed Ginger
- 1 Tbsp Crushed Garlic
- 4 Medium Mushrooms Diced
- 220g bamboo shoots
- 1/2 cup Fried Noodles
- Iceberg Lettuce
- 1 Sliced Chili (optional).
What to Do
- In a large bowl, combine the Soy Sauce with Oyster Sauce and Sesame Oil. Set aside.
- Drain bamboo shoots and dice mushrooms. Set aside.
- Remove the leaves from the iceberg lettuce by gently pulling them off. Please keep it in the fridge to keep it crisp.
- Add peanut oil to a hot wok. Add the mince, ginger, and garlic, and cook until the mince is brown.
- Add mushrooms and bamboo shoots to the mince when it is browned. Cook until softened.
- Continue to cook the mixture for another 2 to 3 minutes.

How to serve
Top with sliced chili and fried noodles. Enjoy eating with your hands!
Tip!
This recipe can be adapted to your family’s favorite vegetables. You can also use water chestnuts or onions, carrots sliced thinly or grated finely, and corn. Make sure not to overcook your veggies so that they retain their delicious crunch.
