It’s an easy way to spice up your rotisserie, drizzle over salads, or use it as a dip.
It also works perfectly with satay grilled chicken skewers, which is another recipe that we love. I also recommend beef satay (I will post a recipe for this one soon).
For simplicity’s sake, I use smooth Peanut Butter from the store. However, you can also whizz your peanuts to make this. You could also use chunky peanut butter.
In order to make a traditional Indonesian satay, which is where satay originated, you would need roasted nuts that are ground by hand.
Mix the peanut butter, soy, chili, fish sauce, and coconut milk in a small pan. Heat over medium heat.
As it nears boiling point, the mixture will thicken. Just before the mixture reaches boiling point, turn off the heat and add fresh lime juice. It can be served warm or chilled. You can serve it either warm or cold.
Can I get ahead?
Yes! Yes! If you’d like to serve the sauce warm, place it in a saucepan and heat while stirring.
What Kind Of Peanut Butter
It doesn’t matter if the peanuts are crunchy or smooth. You can also whizz your dry-roasted nuts in a food processor to a chunky texture or a smooth texture.
You don’t want to feel the heat.
If you don’t want to use the chili flakes, that is fine. It’s up to you whether or not you like it spicy.
Ingredients
- Three heaped tablespoons of smooth peanut butter
- 1 tbsp dark soy sauce – (use tamari for gluten-free)
- Red pepper flakes and 1/2 tsp of chilli flakes
- 1 tbsp fish sauce – (substitute with vegetarian fish sauce if you prefer vegetarian food)
- 7 oz. (200ml.) Coconut milk from a can
- 1 tbsp of light brown sugar
- Half a teaspoon of ground coriander
- Juice from 1 lime (about two tablespoons)
Toppings
- 1/2 tsp sesame seeds
- 1 tbsp finely chopped roasted peanuts
- The flakes of chili are also known as pinch chili.
- 1 tbsp fresh coriander – cilantro leaves
Instructions
- Put all the ingredients for the satay, EXCEPT the lime juice, into a small saucepan.
- Stir with a wooden spatula over med-low heat. As the sauce gets closer to boiling, it will thicken. Do not let the sauce boil. Instead, turn the heat down as it approaches boiling and stir until the sauce thickens. Then, turn off the stove and add the lime juice.
- Serve the sauce in a dish with sesame, chopped peanuts, chili flakes, and fresh coriander.
