Slow cooker pumpkin soup

Ingredients

  • 1 kg of pumpkin, peeled and chopped
  • Peel and chop two small onions
  • 1-litre vegetable stock
  • Half a cup of cream

Instructions

  • Place the onion, pumpkin, and stock into the slow cooker.
  • Cook on LOW for 4 to 6 hours until the pumpkin is soft.
  • Cool down for 10 minutes.
  • Blend until smooth using a stick blender.
  • Add the cream.
  • Taste and serve.
