Spinach and feta rolls

Are you looking for a tasty, easy, and nutritious snack? These spinach and feta rolls are a great option! These rolls can be made in a flash with a few ingredients, including fresh spinach, Feta cheese, and flaky Puff Pastry. You can eat them plain or with your favorite condiments like ketchup and spicy tomato chutney.

Ingredients

  • Puff pastry one sheet frozen
  •  120 G fresh spinach (approximately 3 cups)
  •  200 G Danish feta cheese
  •  One panko bread crumbs
  •  One egg whisked (reserve about a quarter) 1,5 tbsp Brushing the tops of the rolls
  •  1 tsp Fennel seeds and extras to sprinkle on top
  •  Half a teaspoon Salt Plus extra sprinkled on top
  •  Half a teaspoon of Cracked black pepper

Instructions

  • To assemble:
    1. Preheat the oven to 200degC. Line a baking sheet with baking paper.
    2. While you prepare the filling, take the pastry from the freezer and let it thaw.
    3. Heat a medium skillet over medium heat. Add the spinach and 1/4 cup water. Cook gently for 30 seconds up to 1 minute while stirring and allowing the leaves to wilt. Remove the spinach from the heat and allow it to cool.
    4. Combine the feta cheese, BreadcrumbsEgg, Fennel Seeds, Salt, and Pepper in a medium bowl.
    5. After the spinach has cooled, squeeze any excess water out. Chop roughly. Mix thoroughly with your hands.
    6. The puff pastry sheet can be cut in half straight through the middle. The two rectangular pieces will remain.
    7. Place the rectangles on the counter, with the shorter edge nearest you. Create a log-shaped filling in the middle. Make sure the packing is compact and tight. Repeat the process with the second rectangle.
    8. Roll each rectangle using the plastic backing from the Puff Pastry and seal with your fingers.
    9. Each log should be cut into six equal lengths, ensuring the seam is on the bottom of each piece.
  • To cook
    1. Use the egg washes to brush each roll.
    2. Sprinkle with salt and fennel seeds.
    3. Bake for 20 minutes or until golden crisp.
