Sticky Date Puddings consist of moist, fluffy puddings made from dates and smothered with a caramel sauce.
Ingredients
- Half Cup Butter (110g).
- 3/4 cup Brown Sugar (130g).
- Two Large Eggs
- 1 and 1/3 cups Wholemeal Flour
- Baking powder 1 1/2 tsp
- 1 Cup Dried Pitted Dates (250g)
- 1 and 1/4 Cups of Water
- 1 tsp baking soda
Butterscotch Sauce;
- 1 Cup Brown Sugar (190g).
- 3 Tbsp. Butter (40g).
- Half Cup Cream
Instructions
- Bring the dates and the water to a boil in a large pan and let it boil for about 10 minutes.
- While the brown sugar and butter are boiling, combine them until they become light and fluffy.
- Add the eggs one by one and mix between additions.
- Add the baking soda to the dates and stir through.
- Mix the liquid date mixture with the butter mixture.
- Mix in the baking powder and wholemeal Flour. Preheat the oven to 180 degrees C. Grease 6-8 ramekins, and then pour the mixture into the tins.
- Bake for 20-25 minutes or until the skewer comes out clean.
- Let the puddings/puddings cool down before turning them out.
Butterscotch Sauce;
- Put the cream, butter, and brown sugar in a pan and bring it to a boil slowly while stirring.
- Remove the pan from heat after 5 minutes.
- Serve the puddings hot with generous amounts of butterscotch syrup!
- Place the puddings in the microwave and heat for one minute 30 seconds.
