Vegetarian chilli con carne

Ingredients

  • Oil to Fry
  • One large onion, sliced
  • One pepper chopped
  • Chop tomatoes 400g
  • Baked beans, kidney beans/mixed beans, 400g tin
  • 1 tsp of garlic powder
  • Chilli powder: 2 tsp, or more if you prefer it spicy
  • Cumin powder: 1/2 tsp (optional).
  • One vegetable stock cube
  • 1 tbsp tomato puree
  • Quorn mince – 3 handfuls
  • Salt pinch
  • Rice
  • Tortilla chips

Method

    • STEP 1 Heat oil in a pan; add the chopped peppers and onions. Fry until soft.
    • STEP 2 Add mince and continue cooking until brown (2 – 3 min).
    • STEP 3 Add the tomatoes, baked beans, and tomato puree to a stock cube. Add garlic, chili, cumin powder, salt, and cumin powder. Cook on low heat for about 20 minutes. Stir occasionally.
    • STEP 4 While the chili is cooking, begin to cook the rice.
    • STEP 5Taste the dish to determine if you need more chili. If so, cook it for two additional minutes.
  • STEP 6
    • Serve with tortilla chips and rice.
